JHUANGSTUDIO - Sha Cha Mian

Sha Cha Mian is an ode to my trips to Xiamen as a kid. We would always eat sha cha noodles at a place my mom used to eat at when growing up--they were the best you could get. You'd order at the front, where the shiny metal vestibule-on-wheels/soup boiler/noodle station/topping area was, positioned half inside, half outside of the building. We used to sit on plastic stools and wait for the noodles at the flimsy tables, while the fans intermittently blasted our faces. I always observed the men, typically lone rangers, who would order and stand outside and smoke. They'd be wearing a dirty white tank top undershirt, and if it was hot enough, which it always was, they'd roll it up and let their round belly hang free. They'd grab their paper bowl of noodles and make their way to the curb, where they'd return to the common task at hand shared by everyone inside and out: to enjoy their piping bowl of sha cha mian.
